1. Raw Material Reception & Pre-processing  

Fruits are delivered, dry-cleaned, and sorted by size/ripeness using optical sensors or manual inspection to remove defects.  

High-pressure washing (bubble, brush, or spray systems) removes dirt, pesticides, and surface microbes.  

2. Crushing & Juice Extraction  

Fruits are crushed or pulped (e.g., hydraulic pressing for apples, gentle reaming for citrus) to break down cellular structure.  

Extraction methods (cold press, centrifugal, or enzymatic treatment) are selected based on fruit type to maximize yield and preserve nutrients.  

3. Filtration & Clarification  

Juice is passed through screens or centrifugal separators to remove pulp, seeds, and solids.  

For clear juices, enzymatic clarification or ultrafiltration may be applied.  

4. Pasteurization & Preservation  

Heat treatment (e.g., HTST pasteurization at 72°C/15s or UHT at 135–150°C) eliminates pathogens and inactivates enzymes.  

Alternative methods like HPP (High-Pressure Processing) are available for premium NFC juices.  

5. Blending & Homogenization (Optional)  

Juices are blended to achieve target Brix levels, flavors, or functional additives (e.g., vitamins).  

Homogenization ensures uniform texture by breaking down pulp particles.  

6. Packaging & Storage  

Juice is filled into sterile containers (bottles, cans, or pouches) via automated hot-fill or aseptic systems.
