1. Raw Milk Reception & Testing
Incoming milk is weighed, sampled, and tested for quality (e.g., bacterial count, fat/protein content, antibiotics).
Approved milk is filtered to remove impurities and stored in refrigerated tanks (∼4°C) to preserve freshness.
2. Standardization
Fat content is adjusted via centrifugation to produce whole, reduced-fat, low-fat, or skim milk variants.
3. Homogenization
Milk is forced through high-pressure nozzles (e.g., 20–25 MPa) to break down fat globules, ensuring uniform consistency and preventing cream separation.
4. Heat Treatment
Pasteurization: Heated to 72°C for 15 seconds (HTST) or 63°C for 30 minutes (LTLT) to eliminate pathogens.
UHT Sterilization (optional): Treated at 135–140°C for 2–5 seconds for extended shelf-life products.
5. Cooling & Temporary Storage
Milk is rapidly cooled to ∼4°C and held in insulated tanks before packaging.
6. Packaging
Automated filling systems dispense milk into sterile containers (bottles, cartons, or pouches) in a hygienic environment.
7. Cold Storage & Distribution
Packaged products are stored in refrigerated warehouses and transported via temperature-controlled vehicles to maintain quality.
